While I admire those that possess the ability to meal plan for the week (AND STICK TO THE PLAN), I haven’t quite gotten there yet.  Call me crazy, but sometimes knowing what I’m going to eat ahead of time…especially, if it’s just a regular item, makes me less interested.

To keep my meal planning more in line with my personality, I like to scour the web for different types of recipes and styles of eating to insert…when boredom strikes and I can’t will myself to stick with my plan.

This week, I dabbled into a little plant-based eating, salad meals, and just some great recipes from one of my favorite meal-planning sites.  I thought I would share some of the recipes I enjoyed!

Soup | I think I’m hooked on this homemade tomato soup recipe (scroll down the list until you reach Creamy without the cream Tomato soup).  It was one of the absolute best tomato soups that I’ve ever had.  Be sure to follow the directions closely, as I skipped a few steps on the front end and had to backtrack to get the recipe back on course.

Salad | I love fruity salads, especially if I can incorporate specialty cheese or pecans.  I made my own version of this Strawberry and Mandarin Salad, you can make it as-is, or use it as a base point to create your own version.

If salads really are your thing (like they’re mine, you can also check out this great book on salad lunches.  It has so a number of interesting offerings and unlike some salad recipes, these recipes tend to keep my hunger at bay.

Meal | these grilled chicken skewers made me do the happy dance (you know the one you do, when something is just so, so good!). The ingredients were very easy to assemble and I was able to prepare dinner in literally minutes…no kidding!
