It feels so good to be back on the blog after a hiatus.  Over the past few months, I have been focused on my health and experimenting with what it truly means to be in alignment with wellness.

During this period, I realized that while striving for achievement is admirable, embracing a “less is more” approach can be incredibly rewarding, too.  I have shifted from a strict productivity mindset to planning nourishing meals, prioritizing restful sleep, and listening to my body’s true needs — which also includes indulging my sweet tooth from time to time!

Speaking of indulgences, I’ve recently been experimenting with recipes that align with my new mindset.  One of my favorites is a surprisingly tasty batch of chocolate chip cookie bites made with rolled oats.  They’re a perfect blend of comfort and nutrition, featuring whole wheat flour, a touch of salt, and other wholesome ingredients.  I’ve included a similar recipe here if you want to try this treat.   (Note:  I substituted two tablespoons of honey for the sugar and left out the walnuts.).

These cookie bites are easy to make and bake in under 20 minutes.  Their mixture of sweetness and saltiness satisfies some of my toughest cravings for sugar-laden treats.  I know you won’t be disappointed.
